旭酒造と富士通、予測AIを活用した日本酒醸造の実証実験を開始
「獺祭」の醸造工程においてAIを活用し、日本酒造りにおけるAIの実用化に向けて検証
東京, 2018年04月19日 - (JCN Newswire) - 旭酒造株式会社（本社：山口県岩国市、代表取締役社長：桜井一宏、以下 旭酒造）と富士通株式会社（本社：東京都港区、代表取締役社長：田中達也、以下 富士通）、株式会社富士通研究所（本社：神奈川県川崎市、代表取締役社長：佐々木繁、以下 富士通研究所）は、富士通研究所が開発した日本酒造りを支援するAI予測モデルを用いて、旭酒造が製造・販売する日本酒「獺祭」の醸造を行う共同実証実験を実施します。
本AI予測モデルは、日本酒醸造の流れを定義した数理モデルと、「獺祭」の醸造工程において計測される実際のデータを用いた機械学習を組み合わせることで、日本酒醸造工程における最適なプロセスを支援する情報を提供する技術です。本実証実験では、実際に「獺祭」の醸造工程においてAI予測モデルを活用することで、日本酒醸造工程におけるAI予測モデルの妥当性やAI予測モデルの精度向上、ならびに日本酒造りにおけるAIの実用化について検証します。
旭酒造と富士通、富士通研究所は、本実証実験を通じて、AIによる醸造工程の作業支援を実現し、高品質かつ均一な「獺祭」の安定供給に継続して取り組んでいきます。
